Elizabeth F. Knudsen, 96
died peacefully Sunday, Jan. 31, 2010 at her home, surrounded by family.
Born in Cork, Ireland, on July 3, 1913 to Anne (Cullinane) and James Walsh, she came to this country in 1928 and settled in the Boston area. After marrying John Knudsen, they moved to Nahant, Mass., where they raised their four children. Her happiest years, after retiring, were spent on a hillside in Cambridge, Vt., tending her prolific organic garden, her grandchildren at her side.
Devoted to her family, she loved to cook and bake for grand gatherings. Her chocolate chip cookies were famous! She was kind, wise and loving. Her family will love her always and miss her greatly.
Elizabeth is survived by three sons and their wives: Jon and Anna Knudsen of Springhill, Fla., Carl and Lee Knudsen of Naples, Fla. and Rolf and Shirley Knudsen of Jamestown; and a daughter, Elizabeth A. Knudsen of Burlington, Vt., with whom she made her home. She also left 11 grandchildren, 17 great-grandchildren and many nieces and nephews. She was predeceased by her husband, two brothers and four sisters.
